Farmers Market Recipe by Hubba Hubba Foods (York, Maine)

This recipe using Dress That Salad is so fast and easy to put together. The hard part is waiting the hour for it to bake so you can dig in.

Dress That Ratatouille cooked

1 pint Cherry tomatoes
1 eggplant, diced into 1-inch cubes
1 large zucchini, diced into 1-inch cubes
2 tbsp. olive oil
2 tsp. Dress That Salad

– Preheat oven to 450 degrees
– Toss all ingredients together
– Spread out in a baking dish
– Bake 1 hour at 450 degrees, stirring every 15 minutes

Hubba Hubba Foods began as holiday stocking stuffers for friends and family. When my family would come back with the empty jars for more, I figured I might just have something. A decade on, still working out of my kitchen in York, Maine, I’ve extended my line of spice blends and perfected my no-added-fat granola.
